- 2 cups yellow onions (coarsely chopped)
- 2 Tbsp. olive oil
- 2 bay leaves
- 2 cups plums (or of pluots, or a combination, finely chopped)
- 1/2 cup ruby port (or a Cotes du Rhone red wine)
- 3/4 cup brown sugar
- 1/2 tsp. kosher salt
- 1 Tbsp. worcestershire sauce
- 1 Tbsp. soy sauce (naturally fermented)
- 1/2 cup white wine vinegar
- 1/4 tsp. mace
- 1/4 tsp. ground coriander
- 1/8 tsp. allspice
- 1 Tbsp. mustard (brown, I use one with horseradish in it.)
- honey (raw, to taste, if necessary)
- 1 kosher salt
- black pepper (freshly ground)
- white miso (to taste, But please see note, below.)
