- 2 plantains (medium-ripe, peeled and sliced into small half-moon shapes)
- 15 oz. pinto beans (drained and rinsed)
- 2 cups kale (shredded)
- 1/2 cup fresh cilantro (chopped)
- 2 Tbsp. olive oil
- 1/2 cup mayonnaise
- 3 oz. queso fresco (optional)
- 2 jalapeño peppers (ribs and seeds removed, roughly chopped, add more for more heat!)

Really wasn’t a fan. It was my first time having plantain and turns out i don’t like it in stew. Also it was kind of plain.
