- 3 plantains (I use green ones but if you like sweeter waffles then use yellower ones)
- 2 cups full fat coconut milk (I recommend this brand)
- 1/3 cup coconut oil (melted, I use this brand)
- 2 eggs (or 2 gelatin eggs**, use the gelatin eggs for AIP)
- 1 Tbsp. vanilla extract (organic, omit for AIP, buy here)
- 1/2 cup coconut flour (I use this brand)
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 1 Tbsp. gelatin
- 2 Tbsp. boiling water
- 1 Tbsp. cold water
- 3 cups berries (I used blueberries and raspberries this time but any berry should work)
- 2 Tbsp. coconut oil (I use this brand)
- 1/2 cup full fat coconut milk (I used this kind)
- 1 tsp. vanilla extract (organic, omit for AIP, buy here)
- 1 Tbsp. tapioca flour (buy here)

Easier to make than i imagined. The only AIP waffle recipe i found that didn't call for cassava flour. Due to quantities on hand, i used 2 plantains instead of 3 (one slightly ripe and one light green) and one can of coconut milk. Yielded 51/2 full size waffles. They were subtly sweet, crisp around the edges, and very satisfying. Will make again.
