- 1 avocado (diced)
- 1 onion (diced -- set aside a handful of onions to add raw if you'd like)

- 1 1/2 cups shiitake mushrooms
- 1/4 cup bbq sauce
- 2 tortillas (or large wraps)
- 1 cup rice (cooked turmeric, cooked rice + a pinch of turmeric for color)
- 1 tsp. virgin coconut oil (or EVOO)
- 2 tsp. vegan mayo
- 2 Tbsp. salsa (or a squeeze of lime juice, optional)
- 1/2 cup citrus (sweet, diced, optional)
