- 1 tsp. coriander seeds (freshly ground)
- 28 oz. tomatoes (puréed)
- 56 oz. diced tomatoes
- 2 Tbsp. oregano
- 4 Tbsp. chili powder (or to taste)
- 2 cups black beans (cooked)
- 2 cups cannellini beans (cooked)
- 3 cups chickpeas (cooked)
- salt
- pepper
- balsamic vinegar (A splash of)
- 3 handfuls kale (for some added greens)
- lime wedges (optional)
- fresh cilantro (optional)
- veggies (Add in any, you like, e.g., sweet peppers, corn, etc.)
