- 4 cups unbleached all purpose flour (550 grams)
- 3 anchovies (large, or 6 small, rinsed, boned, and chopped)
- 4 Tbsp. provolone cheese (25 grams,grated mild)
- 6 oz. artichoke hearts (1 jar ,roasted, packed in oil, drained and chopped)
- tomato sauce (All of the Sfinciuni)
- 2 1/2 tsp. dried oregano (2 to)
- 1/2 tsp. salt (1/4 to)
- freshly ground black pepper
- 1 Tbsp. olive oil (plus more for brushing)
- 1/2 cup prosciutto (86 grams ,coarsely chopped)
- 1/2 cup fresh mozzarella (85 grams ,thinly sliced)
- 1 Tbsp. Italian parsley (freshly chopped, optional)
