- 2 Tbsp. unsalted butter (melted)
- 2 sausage links (spicy Italian, casings removed, and cooked and crumbled)
- 1/4 cup grated Parmesan cheese
- 1/4 cup baby spinach leaves (chopped)
- 1/4 cup artichokes (chopped marinated)
- 2 Tbsp. Kalamata olives (chopped, pitted)
- 1 Tbsp. fresh basil leaves (chopped, plus extra for garnish)
- 1 pinch red pepper flakes
- 1 tsp. dried oregano
- 1 pinch black pepper
- 4 portobello mushroom caps (stems removed and gills scraped out)

DROOLING.... sooooo good! I made 5 caps, subbed almond meal for the breadcrumbs, Manchego cheese for both mozzarella and Parmesan, basil ghee for butter, 2 Tbsp Kalamata juice for the olives, 1 Tbsp pickled garlic and 1 clove of garlic, 2 vegan bratwurst, dried basil for fresh, and a Kale/chickpea pasta sauce for the marinara. Keith LOVED it!!!!
