  • 2 2/3 pounds rack of lamb (top of bones cleaned)
  • 5 sprigs parsley
  • 5 sprigs basil
  • 6 sprigs thyme
  • 1 sprig rosemary
  • 1 1/2 ounces pistachio nuts
  • 6 tablespoons olive oil
  • 2 tablespoons honey

    Directions

    1. Preheat the oven to 400°F. Remove the top layer of fat from the lamb. Put the herb leaves, nuts and oil in a small food processor and process to a paste. Spread honey over the lamb and season to taste, then spread the pistachio/herb mixture over. If the paste is too thick, thin it with more oil.
    2. Put the lamb in a roasting pan. Pour in 3/4 cup of water and roast for 15-20 mins, until.
    3. Take the meat out of the oven. Loosely wrap it in foil and leave it to rest for 10 mins before carving.
