- 1 cup quinoa (uncooked)
- 1 cup unsweetened shredded coconut
- 1/4 cup brown sugar
- 1/2 cup sliced almonds
- 1/2 cup pistachios (preferably raw, use roasted if you can't find them raw)
- 1/4 tsp. salt
- 1/3 cup vegetable oil
- 2 Tbsp. honey (or maple syrup)
- 1 tsp. natural vanilla extract
- 10 dried apricots (sliced in half horizontally and each half cut in 6 small pieces)
