- 50 grams leek (finely chopped – mostly the white part)
- 2 garlic cloves (. finely minced)
- 1 celery stalk (finely chopped)
- 1 ginger (“thumb” of, finely grated or chopped)
- 2 bay leaves
- 300 grams sweet potato (scrubbed and small dice, 1 medium sweet potato)
- 150 grams orange lentils (red/, rinsed)
- 1.5 liters boiling water (or light vegetable stock)
- 1/2 lemon (a small)
- 2 red chillies
- 1 red pepper
- 1 clove garlic (chopped)
- 1/4 tsp. smoked paprika
- 1/2 tsp. sweet paprika
- 2 Tbsp. fresh lemon juice
- 1 tsp. balsamic (apple cider or white wine vinegar)
- 1 Tbsp. olive oil
- 1 pinch salt
- 1/4 tsp. dried oregano
- 1 tsp. maple syrup (good for balancing the flavours but not absolutely necessary if you are following a sugar-free diet)
