- 1 3/4 cups sugar
- 1/2 cup water
- 1 bowl ice water (or a candy thermometer)
- 2 Tbsp. corn syrup (I just always add corn syrup to cooking sugar just in case so it doesn't crystallize)
- 6 egg whites
- 1 pinch cream of tartar
- 1 1/2 cups butter (cold, cut into cubes)
