- 3 eggs
- 1/3 cup vegetable oil
- 1 1/4 cups water
- 20 oz. crushed pineapple (or pineapple tidbits in pineapple juice)
- 12 oz. evaporated milk
- 14 oz. condensed milk
- 1 container cool whip (thawed)
- 20 oz. pineapple chunks (in pineapple juice, or fresh pineapple for decorating the cake)
- 1/2 cup coconut flakes (sweetened or unsweetened)
- 1 shot coconut rum (optional)
