Delicious! Mine turned out very dense but I think that it happened because I beat the mixture for all the steps. It was supposed to just be mixed at one point. The funny part is that every loved it because of the texture. I may do that on purpose in the future. The flavor is great. I followed the suggestion on a review about putting crushed pineapples instead of juice. That was good. I made sure the crushed pineapples had lots of juice when scooping them up.

Used a bundt pan and turn out heavenly. Also used crushed pineapple instead of juice to make it a double pineapple upside down cake. Worked well. Greased pan with coconut oil.
