This pineapple cake was delicious!! I made this cake for July 4th and it was perfectly light and moist. Very easy with few ingredients. I found that the cake became more moist the next day, from the whipped topping. Everyone loved the cake and I’ll be making another soon.

This is delicious and so easy! I only had a 20 oz. can of pineapple so I used 1/2 for the cake, and 1/2 for the topping. I used sugar free pudding and fat free cool whip, but it still tasted good!

I made this using a gluten free yellow cake mix by Pillsbury. Next time I’ll use the 10oz pineapple can for the cake mix so it will be a bit more moist as Gail has mentioned. Other than that, it was delicious! I loved the light frosting, the pineapple flavor and the texture of the crushed pineapples. This is my first pineapple cake I’ve ever made. I can’t wait to make it for my parents :).

I have made 2 of these Pineapple Sunshine cakes recently and they were GONE in a flash. I used 20 oz can of Crushed Pineapple(10 oz per cake/10 oz for frosting), instead of the 8 oz cans. I used 4 Jumbo eggs. I used the "Creamy" Cool whip. I mixed the pineapple and pudding(frosting) together and let it sit together until I was ready to add the cool whip to the mixture. I used a mixer on low/med for around 1 1/2 minutes on the cake mix ingredients. I only used a spray(wiped off extra) on the bottom of a glass pan also. Both cake were moist. I might try to extra box of Vanilla pudding and poke hole in the cake next time for something different. Did you just follow the box instructions for the instant pudding mix may I ask?

I thought the cake wasn't as moist as I expected so I'm going to try Irene's idea of poking holes and adding pudding. I used applesauce instead of oil and added coconut to the icing. Icing is delicious and addictive!

Very refreshing cake for summer. Took to work everyone loved it. Made no changes , and I will be making it again.

It was amazing ! I poked holes in cake and made another package of vanilla pudding and poured it into holes and then frosted it with the pineapple whipped cream mixture
