I was disappointed in the pancakes. I couldn't really taste the pineapple and I had to add a bunch of a milk to get the batter thin (but I'm new at baking so take my woes here with a grain of salt! The thick batter could just be my mistake!). The coconut syrup was incredible though. But it makes a ton, next time I would half it, maybe even quarter it because me and my girlfriend barely made a dent in the syrup eating them over the pancakes. I wouldn't make the pancakes again but I would do the syrup again.
