- 1 cup sugar
- 8 mint sprigs (fresh, rinsed well)
- 750 mL white wine (light and crisp, chilled, I used a Pinot Grigio)
- 3 cups pineapple juice (fresh, chilled, I blitzed fresh pineapple chunks in a blender and strained it for juice, but you could also use a good not-from-concentrate pineapple juice)
- 1 cup simple syrup (mint, chilled)
- 1 cup bourbon
- 1 cup fresh pineapple (cubed)
- crushed ice
- pineapple wedges (optional)
- mint leaves (optional)
