Didn’t find them very flavorful even after adding 1/2 tsp of coconut and 1/2 tsp vanilla extract. Expected them to be crunchy in texture with shortbread crust but they were soft. Not for me.

Delicious! I used sweetened coconut, drained the pineapple really well and added 2 T of dark rum.

Delicious! I used sweetened coconut because that’s what I had on hand and it was awesome Family loved it too

I replaced the butter with melted coconut oil to make it vegan and it still turned out okay! Reminded me of a pineapple coconut crisp. Very light and great for summer!

Huge hit! Great as a light, refreshing dessert and was so easy to make! I served warm with some vanilla ice cream. Can’t wait to make again!

Ah, well had a problem with the pineapple I was hoping to use and had to throw it out (mid-make) found another ripe one in the garden but only small, so what was I going to purt in the middle? plumped for frozen raspberries to boost the pineapple.
Ended up.more like a dessert. Fab with ice cream!! Yum.
Question, how much butter do you need to get half a cup of melted???

These were super delicious, I was a little short on pineapple (I minced pineapple instead of using crushed, to use what I had on hand) so I added a chopped clementine. The textures were complimentary and had us going back for seconds. Easy + yummy!
