- 3 egg yolks
- 5 cups bread flour
- 2 tsp. salt
- 2 Tbsp. shortening
- 1 Tbsp. fast rising yeast
- 1/2 cup sugar
- 1/2 cup crushed pineapple
- 2 Tbsp. coconut (unsweetened)
- 3 Tbsp. apricot jam

Directions
- 1. Prepare dough by combining first seven ingredients in a large standing mixing bowl fitted with hook attachment.
- 2. Mix on speed 1 until flour starts to incorporate. Increase to speed 2 and continue mixing until dough picks up on hook and sides of mixing bowl are clean.
- 3. Remove bowl from mixer and let dough rise until doubled in size.
