Description
Dessert isn't usually 'healthy' but this one, is amazingly flavorful with a tart and zesty zing! And, it's made out of millet seed. I know, it sounds just awful, but please don't pass judgement until you've tried this vegan pudding.
Ingredients

- 1/2 cup coconut milk
- 1/2 cup honey
- 1 tsp. salt
- 1/4 cup juice concentrate (lemon)
- 20 oz. pineapple (can of, pieces in juice, not syrup)
- 1/4 tsp. guar gum
- 1 1/4 cups seed (dry millet)

Directions
- Bring 1-1/4 cup washed milled seed to boil in 3 cups water. Do the remaining steps while the millet simmers for 30 minutes. Keep the heat low to avoid scorching.
- Add all the remining ingredients in a Vita-mix, Ninja, or Nutri-Bullet. Puree completely.
- Add all the cooked millet to the blender and continue puree until the texture is smooth. About 10 minutes in the Ninja, Maybe 6 min in a Nutri-Bullet. You may need to let the blender rest for a couple of minutes to cool.
- Pour into serving cups and refridgerate overnight, or until cool. Add cherries, or other topping as desired.
