- 2 cups flour (unbleached all-purpose)
- 1 tsp. baking powder
- 3/4 tsp. baking soda
- 1/2 tsp. kosher salt
- 4 oz. coconut oil (at room temperature)
- 1/4 cup light brown sugar
- 2 large eggs (at room temperature)
- 1 cup cream of coconut (This is not coconut milk. I found it in the Mexican food section of our local grocery store. Shake well before measuring.)
- 1/2 cup pineapple (finely chopped, strained, juice reserved, from a can in juice not syrup)
- 2 Tbsp. pineapple juice (reserved)
- 1 cup sugar (confectioners’)
- 1 pinch kosher salt
- 1 Tbsp. milk
- 1 Tbsp. dark rum
