  • 8 ounces cheddar (white Vermont sharp, see NOTES)
  • 4 ounces cream cheese (softened)
  • 1/2 cup mayonnaise (GOOD, i.e. Hellmann's, Dukes, Best Foods, Cain's)
  • 1/2 cup pimientos (finely chopped, or jarred sweet red peppers, drain them well)
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon white pepper (black is OK too)
  • 1/8 teaspoon hot red pepper flakes (optional)
