- 1/2 cup champagne vinegar
- 1/4 cup white vinegar
- 1/2 cup olive oil
- 1 cup radishes (shaved thin)
- 1 cup red beets (shaved thin)
- 1 cup golden beets (shaved thin)
- 1 pork belly
- 1/2 cup apple cider vinegar
- 0.5 oz. kosher salt
- 0.5 oz. ground black pepper
- 1 Tbsp. lemon zest
- 1 Tbsp. chili powder

- 1. Lightly toast peppercorns
- 2. Make vinaigrette with citrus juice, honey, vinegar and oil
- 3. Toss with remaining ingredients, season to taste
