- 3 onions (small diced)
- 1 head garlic (minced)
- salt (To taste)
- chili flakes (To taste)
- 4 lb. tomatoes (canned)
- basil (As needed, chopped)
- 1/4 cup olive oil
- 1 cup pork stock
- 1 1/2 lb. ground pork
- 1/2 cup ricotta cheese
- 2 Tbsp. thyme
- 2 Tbsp. garlic (minced)
- 1/4 cup panko bread crumbs
- salt (To taste)
- pepper (To taste)
- 1 1/2 lb. pig skin (scraped)
- 3 Tbsp. salt
- 6 qt. water

Directions
- 1. For the noodles: Braise the pig skin in salted water until tender, cool and press over night. Cut into desired noodle shape
- 2. For meatballs: Combine all ingredients and form small balls, sauté on medium high heat for 3 minutes on each side
- 3. For the sauce: Sweat the onions until translucent, add the garlic and cook until fragrant. Add remaining ingredients and simmer for 40 minutes, remove and blend in a Vitamix
