- 3 yellow onions (or medium white, thickly sliced)

- 1 head garlic (cloves separated but not peeled)
- 4 cups apple cider vinegar
- 2 Tbsp. kosher salt (or sea salt)
- 2 bay leaves
- 1/2 tsp. dried oregano
- 4 sprigs fresh marjoram (can sub fresh oregano or 1/4 teaspoon dried)
- 4 sprigs fresh thyme (or 1/4 teaspoon dried)

I feel really lucky to have found this recipe. This is a wonderful pickeling recipe for jalapenos. i followed the directions just as described. In the past, I have tried pickeling peppers and they turned out really mushy and disgusting looking. Not this time, they came out with a firm texture and look very nice in the jars.

Excellent, just what I wanted. Was fun to make.Was very yummly. I just used carrots, onions and peppers. Yes I would definitely make this again.
