- peppers (can also be left in thin strips)
- 1 cup carrot (finely chopped, 2-3 carrots)
- 3/4 cup golden raisins
- 1/2 cup dry white wine
- 1/4 cup pimento (sliced, stuffed manzanilla or green olives, about 15 olives)
- 2 Tbsp. balsamic vinegar
- 1 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1 bay leaf
- 1 tsp. cumin (optional)
- 1/2 tsp. oregano (optional)
- 1/4 tsp. canela (optional)
- 14.5 oz. stewed tomatoes (undrained)
