- 1 whole chicken (Lilydale Free Range)
- 1/4 cup brown sugar
- 1/3 cup fish sauce
- 5 1/2 limes
- 375 grams dried rice noodles (cooked according to packet instructions)
- shallots (Fried Asian, to serve)
- toasted coconut flakes (to serve)
- red onion (Thinly sliced, to serve)
- 1 lemongrass stalk (white part only, roughly chopped, stem reserved)
- 3 garlic cloves
- 8 cms young ginger (piece, 40g, roughly chopped)
- 2 kaffir lime leaves (stalks removed)
- 1 bunch coriander (roots and stems washed, leaves reserved to serve)
- 1.5 cms fresh turmeric (piece, 20g, peeled)
- 4 red chillies (long)
- 3 tsp. belacan (roasted shrimp paste)
- 2 tsp. tamarind puree
- 1/2 cup sunflower oil
