    Did a bit of a switch. Used a portabella mushroom, to stuff, instead of a bell pepper and sliced the bell pepper as a swap for the sliced mushrooms. Followed the rest of the recipe. Very good!

    Simple yet full of flavor - great spin on your typical stuffed peppers. I also tried different color peppers but the green are definitely the way to go.
