This was delicious! I made it today with what I had on hand: spice-rubbed flap meat cut from some pork ribs before I smoked them, and only a single sheet (half-package) of puff pastry. I cut 12 squares from the pastry sheet, then rolled each out so they were large enough to cover the bottom and sides of the muffin cups. That came out fine; I don't think I'd like the pastry to be thicker. I also added 1/4 teaspoon of chipotle-pepper powder to perk things up.
Several things I didn't like:
1) Having to click onto three different pages to finally get the full directions. It would be much better to get the full instructions on the first click.
2) My prep time (before baking) took not 10 minutes, but a full hour, counting washing, trimming, chopping, grating etc. The milk/cream sauce took quite some time to thicken/cook down.
3) While I liked the flavor with the milk/cream sauce, it makes it taste more like a Stroganoff than a Cheesesteak. Still delicious, but next time -- and there WILL be a next time -- I may leave out the sauce entirely.

So good. Husband also loves these and he doesn't like anything 😔...👍🏾. Also tried the same recipe with ground beef and slider rolls🍔 and guess what, still delicious.

I love the idea of it but we thought it needed more flavoring so if we make it next time, I will add some seasoning to the meat. Also, it was unclear as to what to do with the juices from the meat & veggies. I ended up adding it to the bites and I think that was a mistake. It made it too runny.

I prepared this recipe and it was wonderful. The only addition I made was to sprinkle a little steak seasoning on the rib eye. I can't wait to try some more of your recipes.
