- 1 courgette (cut into chunks)
- 1 pepper (any colour, diced)
- 1 red onion (small, cut into wedges)
- 1 tsp. Flora Cuisine
- 15 grams Flora Light (½oz)
- 40 grams goats cheese (sliced thinly)
- 1 Tbsp. extra light mayonnaise (Hellmann’s, mixed with)
- 1 tsp. pesto (verde)
- 2 grain (mixed, and seeded bagels)

Directions
- Place courgette, peppers and onion on a baking tray, toss in Flora Cuisine and roast in hot oven 200°C, 180°C fan oven, gas mark 6 for 20 minutes, stirring once or twice. Cool.
- Spread halved bagels with Flora and top with the pesto mayo mix, veggies and goats' cheese. Sandwich together and enjoy!
