  • 4 pounds turkey (saddle)
  • 5 1/4 ounces soft goat cheese
  • 3 tablespoons pesto sauce (fresh green or red)
  • 1/2 cup pine nuts
  • 2 tablespoons olive oil
  • 4 red peppers (seeded, quartered)

    Directions

    1. Preheat oven to 375°F.
    2. Lay turkey, skin-side down, on a cutting board. Spread goat cheese over 1 side and pesto over the other. Sprinkle with 1/2 the nuts. Fold saddle over to enclose filling and tie with butcher's twine. Transfer to a roasting pan and brush with 1 tbsp oil. Season. Roast for 1 hour, basting occasionally. Arrange peppers around turkey, drizzle with remaining oil and sprinkle with remaining nuts. Roast for 30 mins, or until juices run clear.
    3. Let rest for 15 mins then transfer to a warm serving platter. Serve with roasted peppers.
