This was delicious! I also added fresh parsley leaves, chicken, garlic powder, Italian seasoning and Parmesan. The only reason I gave it 4 stars instead of 5 is because this took a lot of time to prep. The squash needed to be warmed up prior to cutting, and took about 10 minutes in the microwave and a lot of patience to get it just right! I also went with a different pesto recipe because the one in here looked like it’d be a bit too much work for my lazy-beginner self. So I used a packet of pesto powder from Target which required 1/4th cup of oil, so using that on top of the 2 table spoons for the squash was a little excessive. Still enjoyed!
