- 1/4 cup lime juice (from 2 limes)
- 4 large garlic cloves (roughly chopped)
- 1 Tbsp. kosher salt
- 2 tsp. paprika

- 1 tsp. dried oregano
- 2 tsp. sugar
- 4 lb. whole chicken
- 3 jalapeño chili peppers (seeded if desired, I use about half the seeds for a medium-hot sauce, and roughly chopped, see note)
- 1 cup cilantro leaves (fresh)
- 2 cloves garlic (roughly chopped)
- 1/2 cup mayonnaise (best quality such as Hellmann's)
- 1/4 cup sour cream
- 1 Tbsp. fresh lime juice (from one lime)
- 1/2 tsp. salt
- 1/8 tsp. freshly ground black pepper
- 2 Tbsp. extra-virgin olive oil

This is so simple to make and absolutely delicious. The green sauce makes it, in my opinion.

05-03-2021 delicious chicken, used honey instead of sugar, 1/2 tsp of smoked paprika + 1 1/2 tsp of paprika. Used lemon juice instead of lime. Marinated overnight Made with bone in chicken pieces ( drumsticks and thighs) baked on a wire rack at 350 degrees convection oven for 45 min. Added sweet potatoe wedges along the side of the rack to roast along with the chicken

Absolutely delicious. Made it tonight in my air fryer under Whole Roast and it was fantastic and my teenager is very happy.

Turned out good. Substituted one of the jalepenos with a habenero for some extra heat. Green sauce has a very fresh flavor while also being slightly rich. I ate it with some black beans. Overall a good meal.

Excellent recipe! The chicken on it’s own was so flavourful and the sauce elevates the dish. Big hit with the whole family.

Best recipe I have tried for roast chicken, and the green sauce is divine! I only use one jalapeño to make it family-friendly.

i needed to put foil on the chicken si ut wouldnt burn, but it did take the 1.5h, and di let it rest... i was hesitant about the chillies in the sauce, i was too conservative, its great with a nice punch so next time full chilies. Served with a quinoa mango avocado lime grilled corn salad. everyone loved it. will make again !

Amazingly delicious the green sauce ties it all together,I paired it with a simple garlic lemon white rice and a red lettuce,cabbage,radish,shredded carrot,and red bell pepper salad with lemon salt and pepper,a bean side dish would also be perfect,tacos,flatbread wrap,super yummy! And the kids approved 😋😋😋😋

I have lived in Ayacucho, Peru, where “Pollo a la Brasa” is the specialty, and this recipe is very close to authentic Peruvian cuisine.

Omg this was sooo great. All the flavors just came together so well, my boyfriend almost cried after the first bite. He was here from start to finish of me cooking it and had the nerve to say I didn’t make it. He is such a hater. Lol

Had at friend’s.made myself and amazing... substituted sazo spice with:
Ingredients:
1 tablespoon ground coriander.
1 tablespoon ground cumin.
1 tablespoon ground annatto seeds (achiote) or turmeric.
1 tablespoon garlic powder.
1 tablespoon kosher salt.
2 teaspoons oregano.
1 tsp ground black pepper.

Amazing!!! that sauce is sooooo yummy!! i roasted potatoes and onions in the chicken pan omg it’s the best new recipe i have tried. i put the sauce on the salad, potatoes and chicken lol

This is a great recipe. I have made it a few times as directed (no changes needed). My husband and I have made several trips to Peru and love "Pollo Abrassa," as it is called. The green sauce is just as the locals make. The chickens are cooked outside, typically, but the idea and seasonings are the same.

fabulous.... so aromatic. I made some adjustments to green sauce but it turned out great as well. Thanks for the recipe
