- 1 Tbsp. fresh ginger (pulp)
- 1 tsp. minced garlic (fresh)
- 2 tsp. sugar
- 1/4 tsp. sea salt
- 3 Tbsp. rice vinegar
- 3 Tbsp. grape seed oil
- 2 Tbsp. sesame oil
- 2 cups udon noodles (cooked and cooled, from about 1-ounce dry noodles - see notes)
- 1 head romaine lettuce (washed and dried, finely chopped)
- 3 persimmons (Cinnamon, washed, dried and thinly sliced, about 1½ cups cups)
- 2 1/2 cups grapes (Christmas Crunch, washed, dried, and sliced in half, lengthwise)
- 2 chicken breasts (cooked, large, shredded, about 2 cups)
- 4 scallions (washed and dried, thinly sliced)
- 1/2 cup dried cranberries
- 1/2 cup toasted almonds (slivered)
