- 4 lb. leg of lamb (boneless, or an equal amount of lamb shanks or beef pot roast)
- 1 onion
- 2 Tbsp. butter (ghee, or neutral cooking oil of choice)
- 3 Tbsp. pumpkin pie spice (advieh, Persian spice mix OR, they have similar ingredients.)
- 2 Tbsp. ground turmeric
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 2 Tbsp. water (saffron, boil 1/4 cup water to the temperature you’d use to make tea. Add a pinch, approx 1/4 teaspoon saffron threads to the water. Refrigerate un-used portion for future use)
- 1 head garlic cloves (peeled and left whole)
- 28 oz. tomatoes

Excellent! This is my go-to lamb recipe. I’ve made it with leg of lamb and lamb chops, and both turned out delicious. The meat is so tender and juicy, well-seasoned and just tasty! I LOVE this recipe!
