- 1 turkey (12-14 pounds)
- 1 cup kosher salt
- 1 cup brown sugar (packed)
- 1 Tbsp. black peppercorns
- 1 tsp. allspice berries (whole)
- 1 tsp. juniper berries
- 1 rosemary sprigs (large or two small fresh)
- 6 whole sage leaves (large fresh)
- 2 fresh thyme (good sized sprigs)
- 2 whole bay leaves
- 3 whole garlic cloves (medium, crushed)
- 1 Orange (large naval)
- 1 apple (large, chopped or crushed fine, core and all)
- 2 qt. vegetable stock
- 1 gal. ice water (or more as needed to cover turkey during the brining process)
- 2 stalks celery (with leaves roughly cut)
- 2 large carrots (cleaned but not peeled with tops trimmed off, roughly cut)
- 1 medium onion (peeled and roughly cut)
- 2 qt. chicken stock
- 1 bunch parsley (with stems)
- 3 Tbsp. butter (melted)
- 1 Tbsp. kosher salt
