I added a few more veggies to the cavity and surrounded the chicken with cut up red potatoes and carrots. Due to the added veggies it took a little longer but it came out delicious and moist. DEFINITELY wait the exra 10-15 minutes before you cut into is for juicy cooked to perfection meat! Loved it!
