- 2 cups nuts (total raw, I like: 1 cup almonds, 1/2 cup walnuts, 1/2 cup brazil nuts)
- 1/2 tsp. sea salt
- 1/4 cup coconut oil
- 6 medjool dates (soaked in hot water for 15 minutes, then pitted & stemmed)
- 28 oz. full fat coconut milk
- 14 oz. coconut cream
- 1 tsp. vanilla extract
- 2 lemons (about 4–5 tablespoons)
- 1 Tbsp. lemon zest (zest lemons before you juice them)
- 1/2 cup raw honey (more or less to taste)
- 1/2 tsp. freshly grated ginger (I love it, but leave out if you don’t, optional)
- 1/8 tsp. sea salt
- 1/2 cup fresh strawberries
- 1 handful fresh mint
