Amazing. Versatile recipe. I changed it up a bit, instead of fish and leeks, I used smoke pork neck bones. The broth from the neck bones was very rich and mixed well with the cream. The recipe is a very good baseline for soup -- bay leaf, onions, potatoes, butter and cream. Next time, I'll make it with smoked haddock, if I can find any.
