These muffins taste absolutely amazing and are incredibly moist! I didn’t have bran so I used flax seed meal instead, and added pumpkin protein for extra protein. I also experimented with Apple Spice seasoning (cinnamon, ginger, clove…) with oats and sugar for the topping. They turned out fabulous and make a light pre-workout snack.

These were easy and turned out so yummy! All of my kids even liked them. I added a banana to the mix but, other than that, I followed the recipe exactly.

Excellent healthy vegan muffins. Moist and not too dense. I added raisins. They keep well in the freezer.
