- 1 hoagie buns (each, 6” inch, sliced and toasted)
- 2 Tbsp. mayonnaise
- 1 piece leaf lettuce (green)
- 1/3 cup coleslaw (prepared)
- 1 green tomato (each, marinated, seasoned to taste with salt and pepper)
- 4 oz. pork belly (smoked)
- 3 cups rice wine vinegar
- 1 cup water
- 1 Tbsp. sugar (granulated)
- 1 1/2 tsp. salt
- 6 tarragon (each, fresh, sprigs)
- 1 green tomato (each, ¼” thick slice)

Directions
- 1. In a medium mixing bowl, combine vinegar, water, sugar, salt and tarragon
- 2. Mix well to combine
- 3. Place sliced tomatoes in the marinade. Cover and let marinate overnight in refrigerator
