- 6 leg quarters (bone-in, skin-on, halved)
- kosher salt
- freshly ground black pepper
- 1 Tbsp. canola oil
- 4 onions (small, halved and sliced)
- 1 lb. mushrooms (quartered)
- 2 medium carrots (quartered lengthwise and sliced)
- 1 green pepper (large, thinly sliced)
- 1 red pepper (large, thinly sliced)
- 4 cloves garlic (finely sliced)
- 1 Tbsp. smoked paprika
- 1/4 tsp. pepper flakes (Aleppo, optional)
- 1/2 Tbsp. oregano
- 1 Tbsp. white rice flour
- 1 cup dry white wine
- 1 1/2 cups chicken gravy
- 3 cups chicken stock
- 1 1/2 cups water (omit if using stock)
- 1 1/2 cups diced tomatoes (I like fire roasted, but if you're watching sodium I prefer these)
