Description

This dish has a great presentation and will make a great appetizer. The mushrooms add a soft texture to the dish, while having a nice golden brown color. Adding sprinkled parmesan cheese, this dish will have a kick of flavor in every bite.

Ingredients

  • 400 grams mushrooms (penny cap, or assorted mushrooms)
  • 1/2 onion
  • salt
  • chicken broth (1 lt., may be substituted with water and a bouillon cube)
  • 300 grams rice
  • 1/2 cup white wine
  • Parmesan cheese

    Directions

    1. Soak the mushrooms for a few hours if they are dehydrated. If so, save the water the mushrooms were soaked in. If the mushrooms are fresh there is no need to hydrate.
    2. Finely chop the onion and saute over low heat until lightly golden. Add the mushrooms and salt as needed, continue to cook for a few minutes.
    3. Separately, heat the broth, adding the water where the dehydrated mushrooms were soaked in.
