  • 400 grams penne pasta
  • 1 onion (peeled and finely diced)
  • 1 clove garlic (peeled and finely diced)
  • 1 Orange (zested and squeezed)
  • 300 grams scallops
  • 60 grams butter
  • 1 bunch chives (chopped finely)

    Directions

    1. Cook the pasta in a large saucepan according to the package directions.
    2. Meanwhile, melt 2 tbsp butter in a large skillet over medium-high heat. Add the scallops and cook for 2 mins per side, turning once. Add the orange juice and zest, onion and garlic, reduce the heat and simmer for 2-3 mins. Season with salt and pepper to taste. Cut the remaining butter into small cubes and add them to the scallop mixture; stir until melted. Remove from the heat. Drain the pasta and return it to the saucepan. Fold in the scallop mixture and serve hot, sprinkled with chives.
