- 1 Tbsp. olive oil
- 1 brown onion (or white, peeled and chopped)
- 7 oz. chorizo (sliced, usually gluten free, but check if required)
- 2 cloves garlic (peeled and minced)
- 1 Tbsp. tomato puree (/paste)
- 14 oz. chopped tomatoes (tinned)
- 1 tsp. dried thyme
- 3 stalks fresh thyme
- 1 tsp. chilli flakes (heaped of dried, you can add more or less depending on how much you like chillies)
- 1 tsp. sugar
- 8.75 oz. mozzarella
- 3 Tbsp. grated Parmesan cheese (finely)
- 1/2 tsp. freshly ground black pepper
- 2 spring onions (chopped, scallions)

Made it for the first time and eating it as I type. Wow. Not usually the biggest fan of spicy food but for this I will make an exception! Absolutely delicious 😋

Very easy to make! I did cheat with the bell peppers, buying jarred roasted peppers. Unfortunately they had been pickled a bit but not to much that it affected the dish. Other than the peppers I did everything as it should be. I will definitely be making this again.

I used roast pumpkin instead of bell peppers. Sweet, cheesy, spicy, delicious.
