This vegan Penang Char Kway Teow recipe swaps the animal ingredients for plants to make a vegan version of this popular Malaysian street-food dish.

- 100 grams mushrooms (whatever is your favourite)
- 5 garlic shoots (cut into 3 cm, 11⁄4 in lengths)
- 2 garlic cloves (minced)
- 2 Tbsp. chilli paste (Asian)
- 75 grams chinese cabbage (shredded, wombok)
- 3 spring onions (scallions, cut into 5 cm, 2 in lengths)
- 500 grams wide rice noodles (prepared according to the packet instructions)
- 100 grams bean sprouts
- 150 grams soft tofu (or silken)
- 1 Tbsp. cornflour (cornstarch)
- 1 Tbsp. oat milk
- 1 pinch ground turmeric
- 1 pinch black salt
- 3 Tbsp. dark soy sauce
- 2 Tbsp. Maggi Seasoning Sauce (or light soy sauce)
- 2 Tbsp. kecap manis
- 1 Tbsp. vegetarian oyster sauce
- 1 Tbsp. fish sauce (vegetarian)
- 2 tsp. caster (superfine sugar)
