- 12 shelled prawn
- 2 Tbsp. sugar
- 1 lb. rice noodles (fresh flat, completely loosened and no clumps)
- 1 lb. cockles (weight with shell bloody, shelled)
- 1 bunch bean sprouts (fresh, picked, rinsed with cold water and drained)
- 1 bunch chinese chives (1 inch of the bottom section removed and cut into 2-inch lengths)
- 3 cloves garlic (minced finely)
- 4 Tbsp. oil (for frying)
- 1 oz. red chiles (dried, seeded and soaked in water)
- 2 red chilies (fresh, seeded, I kept some seeds in for more heat)
- 3 shallots (small, sliced)
- 2 cloves garlic (sliced, optional)
- 1 tsp. oil
- 1 pinch salt
- 5 Tbsp. light soy sauce
- 1 1/2 Tbsp. dark soy sauce
- 1 Tbsp. sugar
- 1/2 tsp. fish sauce
- 1/2 tsp. salt
- 2 dashes white pepper (powder)
