Description
This "sauce-less" pizza combines the sweetness of pears and the earthiness of cremini mushrooms with the sharpness of gorgonzola cheese and the peppery bite of arugula. It's a delicious way to get your daily requirement of fruits, veggies and pizza!
Ingredients

- 3 cups all purpose flour
- 1 tsp. fine sea salt
- 1 tsp. honey
- 0.25 oz. dry yeast (packet of)
- 1 Tbsp. extra-virgin olive oil
- 1 cup warm water (divided into 1/4 cup and 3/4 cup)
- 4 Tbsp. extra-virgin olive oil
- garlic salt
- 4 cremini mushrooms (sliced thin)
- 2 bartlett pears (ripe, cored and sliced thin, about 1/8 of an inch)
- 1 small yellow onion (julienned into very thin slices)
- 4 oz. crumbled gorgonzola cheese (package of)
- 8 oz. shredded mozzarella cheese (package of finely)
- 4 oz. walnuts (chopped)
- 5 oz. baby arugula (package of)
- balsamic glaze (optional)

Directions
- Making the dough:
- Get 1/4 cup of warm water from the tap. Dissolve the yeast and teaspoon of honey in the water. Be sure the water is not boiling hot or it will kill the yeast. Set it aside to bloom. It should get nice and frothy and smell like bread.
- In a large mixing bowl combine the 3 cups of all-purpose flour, teaspoon of salt, tablespoon of olive oil and 3/4 cup of warm water. Dump in the yeast mixture and stir to combine into a soft slightly sticky dough.
