- 50 grams corn starch (UK known as Cornflour)
- 3 large eggs (At room temperature – UK large, Canadian ‘Extra Large’; Australian ‘Jumbo’; and US ‘Extra or Very Large’)
- 1 egg white (large additional)
- 160 mL dairy-free milk (alternative I used Koko unsweetened coconut drinking milk. See NOTES re alternatives.)
- 2 Tbsp. maple syrup
- 1 tsp. vanilla extract
- sunflower oil (to roast)
- 3 fresh pears (firm, peeled, de-seeded and cut into cubes)
- 80 grams walnut pieces
- 1 1/2 tsp. vanilla extract
- 2 Tbsp. soft brown sugar (light)
- 1 Tbsp. coconut oil
- 250 grams blackberries (fresh or frozen)
- 65 grams golden caster sugar (caster sugar, for preference)
- 3 Tbsp. water
- cassis liqueur (to taste optional)
