- 3 pears (ripe medium, I used Anjou – you only need 2 pears but I suggest having an extra one just in case you mess up a pear)

- 1 cup sugar
- 2 Tbsp. lemon juice
- 1 cinnamon stick
- 1 tsp. vanilla extract
- 1/8 tsp. salt
- 6 Tbsp. butter (at room temperature)
- 2/3 cup sugar
- 3/4 cup ground blanched almonds
- 2 tsp. flour
- 1 tsp. cornstarch
- 1 large egg
- 1 egg white
- 1 tsp. vanilla extract
- 2 tsp. almond extract
