- 1 1/2 Tbsp. instant espresso coffee powder (or less as preferred)
- 140 mL boiling water
- 180 grams gluten free plain flour (blend eg. Gluten Free Alchemist Blend B or A – See NOTES)
- 40 grams almond meal (ground almonds)
- 1/2 tsp. xanthan gum
- 1/2 tsp. fine sea salt
- 1 Tbsp. gluten (baking powder, free)
- 30 grams cocoa powder
- 125 grams butter (or dairy free block alternative softened)
- 125 grams coconut sugar
- 50 grams maple syrup
- 2 large eggs (At room temperature – UK large, Canadian ‘Extra Large’; Australian ‘Jumbo’; and US ‘Extra or Very Large’)
- 1 tsp. vanilla extract
